
Food with Flair is a more relaxed holiday
course but with a similar format that runs from Monday to
Friday and is a course for those who enjoy good food. It
is fun! By adding some of the important methods and techniques
involved in cooking to the practical knowledge you already
have, the course will encourage enthusiasm in the use of
your skills in both traditional and innovative recipes. We
will teach you time saving tips and advance preparation that
can take the strain out of cooking. We will show you how
to make the most of the wonderful variety of ingredients
that are available today, both from at home and abroad.
Our inspirations come from around the globe,
cooking food to suit our lives today - generally light and
healthy, colourful and stimulating. We veer away from long
complex recipes, towards quicker cooking methods retaining
the innate qualities of their ingredients.
There will be dishes which are ideal for
relaxed lunches and suppers, including some vegetable based
menus. Our evening meals will be examples of how to entertain
with confidence and style. We will emphasise the importance
of advance preparation, and the vital place of classical and
contemporary sauces. Boning meat and poultry, making and using
a variety of pastries and making bread are some of the areas
that we cover. We will show you how to use fresh herbs and
spices to the best advantage.
The relaxing atmosphere and personal approach
